The Texas Hill Country Olive Company is a family-owned business committed to supplying the highest quality olive oil produced in the United States, located in Dripping Springs, TX. The certified organic olive orchard is adjacent to a Tuscan-inspired mill house, with state of the art Italian olive press, and large tasting room open t the public.

The Texas hill Country Olive Company is the creation of Texas natives John Gambini (huntsville), and Rick Mensik (Rosenberg). The brother-in-laws began the company in 2009, focused on preserving the natural beauty of the area while providing fresh, carefully selected products. John and his wife had settled in Austin a few years prior for his multi-family construction company. Rick and his family, operating numerous successful restaurants/clubs in Fairbanks, Alaska, were ready to return to Texas. The orchard and mill house presented an opportunity to bring their extended families together in the Austin area; several are now involved in a variety of activities within the company.

The company is proud to join the pioneering group of entrepreneurs who are building the olive oil industry in the state of Texas.
