Things to Know:

The Bistro at Texas Hill Country Olive Co. is a restaurant located in the beautiful hills of Dripping Springs.

Our menu features our award winning Texas Hill Country Olive Co. products, such as our Extra Virgin Olive Oils, Balsamic Vinegars, and Infused Olive Oils.

Reservations are not required to dine. However, there is limited seating and we cannot guarantee the ability to seat large walk-in groups. In addition to the indoor bistro seating, we have tables on our patio.

The Bistro operates with counter service ordering, and our staff will bring your food and beverages to your table.

Our beautiful Tuscan style building also hosts a Gourmet Texas Gift Shop full of Texas Olive Oil, Balsamic Vinegar, Olives, gourmet food products, cooking accessories and gifts.

We offer tours and tastings of our olive oils and balsamic vinegars. We recommend booking these in advance, as they tend to fill up.

Romaine lettuce, shallots, fresh lemon zest, red pepper flakes, and shaved parmesan tossed with our Terra Verde Extra Virgin Olive Oil and topped with herbed grilled chicken. Finished with garlic crisp and a hard boiled egg.

Spring mix and arugula tossed with seedless watermelon, mint, radish, feta cheese and pepita seeds and drizzled with a house-made White Balsamic and Spaniard Olive Oil Mint Vinaigrette.

Quinoa, spring and kale mix with roasted sweet potato, pickled red onions, rainbow shaved carrots, gorgonzola cheese, green apple, tossed pecans and jalapeno drizzled with our house-made Honey Fig Vinaigrette made with our Hojiblanca Olive Oil.
