About Us
Texas Hill Country Olive Co. is a family-owned business founded by father-daughter duo John and Cara Gambini. Our journey began in 2008 with the purchase of 17 acres in beautiful Dripping Springs, Texas, and a shared dream of bringing our Italian heritage to life through olive growing.
What started as a passion for pioneering Texas olive oil has grown into one of the state's most awarded olive oil companies. Today, we continue that tradition with premium extra virgin olive oils made from olives grown in our American orchards, proudly produced and bottled in Texas.
Rooted in family, quality, and a love of great food, we're passionate about sharing exceptional olive oils, balsamic vinegars, and gourmet products with our customers.
Our Story
Our story began with a dream, a little Italian heritage, and a Thanksgiving conversation in 2008 that changed everything.
My dad, John, had always dreamed of owning a vineyard. As third and fourth-generation Italian Americans, our family loved the idea of bringing a little piece of Italy to Texas. But after reading about local farmers experimenting with olive trees, we saw an opportunity to help pioneer something new: Texas olive oil.
By December 2008, we had purchased land in Dripping Springs, and by spring 2009, our first olive trees were in the ground. Inspired by the rolling hills and rocky limestone soil reminiscent of Italy, we began what would become a true family labor of love.
In 2010, we celebrated our first harvest and began earning awards for our olive oils. While the unpredictable Texas weather has brought challenges over the years, our passion for exceptional olive oil has never changed. Today, we continue our tradition of crafting exceptional olive oil from olives grown in our American orchards, with every bottle produced right here in Texas.
What started as a family dream has grown into a destination where we love sharing our passion for olive oil, balsamic vinegar, and great food. Whether you visit us in Dripping Springs for a guided tasting or shop with us online, we hope you'll enjoy a little taste of our family's story.
