Blackberry Cobbler with Blackberry Balsamic and Sola Stella Extra Virgin Olive Oil
Ingredients
For the Blackberry Mixture (Filling):

4 cups fresh blackberries (or frozen, thawed to room temperature)

1 tbsp Blackberry Balsamic Vinegar

1/4 cup granulated sugar

2 tbsp all-purpose or self-rising flour

1 tsp vanilla extract

Zest of 1 lemon

Pinch of salt
For the Cobbler Batter (Topping):

1 cup self-rising flour (or all-purpose with 1 tsp baking powder and 1/4 tsp salt)

1/4 cup granulated sugar

1/4 tsp salt

1/4 cup (4 tbsp) unsalted butter, cold and cut into small pieces

1/4 cup whole milk (or 2%)
Instructions

Preheat your oven to 375°F (190°C). Grease a 9x9-inch baking dish with melted butter or Sola Stella Extra Virgin Olive Oil.

In a large bowl, combine the fresh blackberries, Blackberry Balsamic Vinegar, sugar, self-rising flour, vanilla extract, lemon zest, and salt. Gently toss the blackberry mixture until evenly coated. Transfer it to the prepared dish and spread evenly.

In another bowl, whisk together the cobbler batter ingredients: flour, sugar, baking powder (if needed), and salt. Cut in the cold butter until the texture resembles coarse crumbs.

Drizzle the olive oil, then add milk to create a soft, slightly sticky dough.

Drop spoonfuls of batter over the berries. Don’t cover it completely — leaving gaps lets the juicy berries bubble through as it bakes.

Bake for 35–40 minutes, or until the topping is golden brown and the fruit cobbler filling is bubbling around the edges.
