Greek Style Ribeye Steak with Feta and Olive Topper

Ingredients:

Topper:

  • 1/4 cup Kalamata olives
  • 1/4 cup Castelvetrano olives
  • 1/4 cup feta cheese
  • 1 teaspoon red pepper flakes
  • 1 teaspoon pink peppercorns, cracked or ground
  • 1 1/4 cup Super Greek Extra Virgin Olive Oil

Steak:

  • 1 large bone-in ribeye (still delicious with flank steak or skirt steak)
  • Salt and black pepper to season the steak

Directions:

  1. Chop all olives and crumble the feta on cutting board, toss all topper ingredients together and marinate overnight in a large bowl if possible.
  2. Preheat a large skillet or the grill, AND preheat the oven on broil setting.
  3. Take a large bone-in ribeye, and salt and pepper the steak.
  4. Sear the steak well using the Super Greek Extra Virgin Olive Oil.
  5. Remove the steak from heat, either in the skillet or an oven safe pan. Place steak and top with the olive mixture.
  6. Broil steak just until the topping starts to brown.
  7. Slice and serve.

Serving Suggestions:

  1. Add a drizzle of basil chimichurri and serve as your entree, place potatoes and veggies on the side.
  2. Cut steak into smaller strips, serve with topper in pita pockets or tortillas.
  3. Slice steak thin and serve as a greek steak sandwich on break with arugula and sliced tomato.
  4. Chop steak small and serve with steak topper in a greek style salad, with lettuce, tomato, cucumber, and red onion. Make a greek style dressing, but use White Lemon Balsamic Vinegar in place of red wine vinegar and fresh lemon juice, and some of our Italian Bread Dipping Spices for the seasoning (contains oregano, garlic powder, and basil, common greek spices).
  5. Cut into steak cubes and put on wooden skewers or metal skewers with cherry tomatoes and bell peppers for an appetizer.
