Peach Balsamic Vinaigrette

Makes 1 Cup
Ingredients:
- 12 oz fresh or canned peaches, diced
- 2 oz Peach Balsamic Vinegar
- 1 ea garlic clove, minced
- 1 tsp fresh thyme, minced
- 1 oz cold water
- ¼ C Terra Verde Olive Oil
- to taste salt and pepper
Directions:
1. Blend peaches, balsamic, garlic, thyme, and water in a blender until smooth.
2. Drizzle olive oil in the blender while the blender is running.
3. Season with salt and pepper.
