Creamy Gnocchi with Burrata and Sicilian Olive Oil

Creamy Gnocchi Burrata

If you're looking for a quick and delicious dinner that combines the richness of creamy burrata with the fresh flavors of tomatoes, this Creamy Gnocchi with Burrata and Sicilian Infused Olive Oil is your answer.

Using just a handful of ingredients, including store-bought gnocchi (or try making your own) and vibrant cherry tomatoes, this dish comes together in just a couple of minutes, making it one of our favorite ways to enjoy pasta dinners.

The pillowy gnocchi is coated in a creamy tomato sauce, enhanced by our Sicilian infused extra-virgin olive oil (garlic and sicilian herb flavor), which adds so much flavor and depth. With lots of fresh basil and a little kick from red pepper flakes, this pasta dish is perfect for elevating weeknight meals into beautiful creations.

Creamy Gnocchi with Burrata and Sicilian Olive Oil

serves 4-6 guests

Ingredients:

  • ¼ cup Sicilian Infused Olive Oil
  • 6-8 cloves of garlic, peeled and lightly crushed
  • 2 pints of Cherry Tomatoes
  • ½ tsp Red Pepper Flakes
  • ½ cup of Heavy Cream
  • 2 (16 oz packages of) Potato Gnocchi
  • 2 (4oz) balls of fresh Burrata Cheese
  • ½ cup fresh Basil leaves, sliced or torn
  • Sea salt and black pepper, to taste

Directions:

  1. Bring a large pot of water (salted) to boil, once water comes to a boil add gnocchi and cook according to package directions.
  2. Reserve ½ cup of pasta water when draining.
  3. In a separate large skillet, heat ¼ cup olive oil over medium heat and add garlic and cook until fragrant, about 2 mins.
  4. Increase heat to medium heat and add tomatoes. Cook, stirring occasionally until tomatoes start to break down, about 10 mins.
  5. Season with red pepper flakes, Salt and pepper to taste.
  6. Reduce heat to to low and stir in heavy cream and the additional ¼ cup Sicilian Infused Olive Oil.
  7. Combine cooked gnocchi and reserved pasta water to the tomato sauce, toss and stir in fresh basil.
  8. Break burrata balls into pieces and scatter evenly throughout the pasta and garnish with remaining basil before serving.
