Are you in need of a refreshing drink to quench your thirst on a hot day? Want a non-alcoholic drink, like cucumber water, but want to mix it up? Then look no further than this invigorating recipe for Cucumber Lime Agua Fresca by our very own Chef Jen!

Aguas Frescas, meaning "fresh waters" in Spanish, are popular non-alcoholic drinks commonly sold by street vendors and are very popular drinks in Mexico and Central America. It's a combination of fresh water, fresh fruit and/or vegetables, and the occasional herbs, like basil or mint. Popular flavors include watermelon agua fresca, horchata agua fresca, and our personal favorite: cucumber lime (like spa water - but better!).

Our particular variation combines the crispness of cucumber, the spice of ginger, the herbs of mint, and the subtle complexity of Persian Lime Balsamic Vinegar, resulting in a truly revitalizing concoction. Although most lime aguas frescas contain fresh lime juice, we opted for our new Persian Lime Balsamic Vinegar in the simple syrup to take our version to the next level.

Cucumber Lime Agua Fresca with Texas Balsamic Vinegar

Ingredients:

Agua Fresca Ingredients:

  • 1 cup lime simple syrup
  • 2 large cucumbers (the kind of cucumbers depend on your preference - we love english cucumbers from our garden!)
  • 1 knuckle fresh ginger
  • 4 cup water
  • 10-15 fresh mint leaves

Lime Simple Syrup Ingredients:

Directions:

Lime Simple Syrup:

  1. Combine all ingredients in a pot and simmer until sugar is dissolved

Lime Agua Fresca:

  1. Place cucumbers, ginger, and mint in a blender with 2 cups of water and blend until smooth

  2. Place a fine mesh sieve over a pitcher lined with cheese cloth to remove all pulp

  3. Add the remaining water (2 cups) and 1 cup of simple syrup

  4. Chill and save or later or serve immediately with fresh basil, lime wedges, cucumber slices - really whatever you want!
