Sicilian Chicken Penne with Sicilian Infused Olive Oil

Looking for an easy pasta dinner with plenty of fresh flavor? This Sicilian Chicken Penne combines tender chicken, cherry tomatoes, baby spinach, Parmesan, and our Sicilian Infused Olive Oil for a simple meal that comes together with minimal prep. The warm pasta gently wilts the spinach and softens the tomatoes, while the infused oil brings the whole dish together.

Ingredients

  • 3 lbs thin boneless, skinless chicken breasts
  • 2 pints heirloom cherry tomatoes
  • 8 oz baby spinach
  • 16 oz penne pasta
  • 6 oz Sicilian Infused Olive Oil
  • 1 tbsp minced garlic
  • 1 tbsp crushed red pepper
  • Salt & black pepper, to taste
  • Shaved Parmesan, for finishing

Directions

  1. Season the chicken with salt and pepper and bake at 350°F for 30–40 minutes, or until cooked through. Slice the cooked chicken.
  2. While the chicken cooks, prepare the penne according to package directions.
  3. Halve the cherry tomatoes and wash and dry the spinach.
  4. Drain the pasta and transfer it to a large bowl while still hot. Add the tomatoes, spinach, garlic, and red pepper flakes.
  5. Drizzle with Sicilian Infused Olive Oil and toss. The heat from the pasta will gently wilt the spinach and soften the tomatoes.
  6. Add the sliced chicken and finish with shaved Parmesan. Serve and enjoy!

Quick Tip: For an even easier weeknight meal, use rotisserie or pre-cooked grilled chicken.
