Looking for a vegetarian meal, or vegetable based side dish, to mix things up? Enter tagine: the North African dish that is about to change your life.

For those not in the know, tagine refers to 2 things: the dish itself, and the pot it is cooked in (both named tagine or tajine).

A tagine (the pot) is a North African (most commonly Moroccan) pot with a flat base and cone-like top. The cone lid allows steam to rise and condense before slowly cooking and basting the food. It's great to cook very tender meat and potatoes, and keeps your food warm for extended periods of time. Plus - it makes a beautiful addition to your dinner table!

Our tagine dish is completely vegan, and filled with vegetables, herbs, spices, and nice dash of Sola Stella Extra Virgin Olive Oil and (maybe even some Harissa infused olive oil for an extra kick).

BONUS TIP: want to make this tagine (meal) without actually purchasing a tagine (pot)? Instead of a tagine, use a wide and shallow dutch oven of heavy skillet with a tight fitting lid or tin foil.

Vegan Moroccan Tagine with Potatoes and Olives

Ingredients:

  • 2 potatoes, peeled and cubed
  • 1 yellow onion, thinly sliced
  • 1 cup sliced squash
  • 1 cup sliced turnip
  • 1/4 cup Sola Stella Extra Virgin Olive Oil
  • 5 cloves garlic, chopped
  • 1 tsp ginger
  • 1 tsp turmeric
  • 1 cinnamon stick
  • 1/2 cup green olives, whole (you can always try stuffed olives if you'd like!)
  • 2 cups vegetable stock
  • 1 bunch chopped cilantro
  • Drizzle of Harissa Infused Olive Oil (if you want extra spice)

How to Make: A Step by Step Guide

Step 1: Saute Onions and Garlic

Heat tagine over medium heat with Sola Stella, onions, and garlic, and saute till translucent.

Step 2: Add Spices

Add all spices and allow to become aromatic.

Step 3: Add Veggies, Stock, and Cook

Add turnips, potatoes, squash and vegetable stock and de-glaze. Cover and simmer for 30-40 mins.

Step 4: Top off and Serve

Add olives and chopped cilantro to top, a drizzle of harissa infused olive oil for spice, and serve.
