Bread Pudding with Rum Sauce and Fig Balsamic Vinegar
Inspired by the figgy pudding of the Brits, we've created our own version, but with a twist! And who can say no to a warm bread pudding?
With the base of a classic bread pudding (stale bread & custard) we additionally add Sola Stella Extra Virgin Olive Oil, which adds a buttery flavor and additional moisture, as well as dried figs and our delicious Fig Balsamic Vinegar, for a sweet and tart kick.
Top it all off with a butter rum sauce, and you've got the most comforting dessert to keep you warm during the Holiday season.

Bread Pudding with Rum Sauce and Fig Balsamic Vinegar
Ingredients:
For the Fig Bread Pudding:
- 6 cups stale bread, cut into 1-inch cubes (such as ciabatta, baguette, or sourdough bread)
- 4 large eggs
- 1 1/2 cups whole milk
- 1/2 cup granulated sugar
- 1/4 cup Sola Stella Extra Virgin Olive Oil
- 2 tablespoons Fig Balsamic Vinegar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup dried figs, chopped
- 1/4 cup sliced almonds (optional, for topping)
For the Rum Sauce:
- 1/2 cup unsalted butter
- 1/2 cup brown sugar
- 1/4 cup dark rum
- 1/2 cup heavy cream
- Pinch of salt
Instructions:

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a baking dish (approximately 9x13 inches) with a little olive oil.

Prepare the Bread: Place the cubed bread (old bread is better!) in the greased baking dish, ensuring they are evenly distributed.

Prepare the Custard: In a large bowl, whisk together the eggs, milk, granulated sugar, olive oil, fig balsamic vinegar, vanilla extract, ground cinnamon, and salt until well combined.

Combine with Bread: Pour the fig balsamic vinegar custard mixture evenly over the bread cubes. Gently press down on the bread to ensure it absorbs the custard.

Add Dried Figs: Sprinkle the chopped dried figs over the top of the bread mixture, distributing them evenly.

Optional Almond Topping: If you're using sliced almonds, sprinkle them over the top for added texture and flavor.

Bake: Place the baking dish in the preheated oven and bake for about 45-50 minutes, or until the top is golden brown and the custard is set.

Prepare the Rum Sauce: In a small saucepan over medium heat, melt butter. Add brown sugar to the melted butter and stir until dissolved. Pour in the rum and let it simmer for a couple of minutes. Add the heavy cream and a pinch of salt, stirring until the sauce thickens slightly.

Serve: Remove the bread pudding from the oven. Serve warm rather than room temperature, drizzling the decadent spiced rum sauce over individual portions just before serving.

Store: If bringing later to a party, reserve warm sauce for later in an airtight container. Cover casserole dish or baking dish with plastic wrap and store in fridge until needed. Warm up at the party, and top with warm rum sauce at event, rather than combining at home.
