Creamy Peach Ginger Dressing
Peach and ginger are old friends in this new dressing developed by Chef Michael. We have been dreaming up salads to toss it in. So far there hasn't been any mixture we haven't liked. When you find your perfect salad mix let us know in the comments below.
**NOTE: original recipe was Apricot Balsamic Vinegar but we have since replaced with the Peach Balsamic Vinegar.
Creamy Peach Ginger Dressing
Ingredients:
- ¼ c Peach Balsamic Vinegar
- 2 tbsp tahini
- 1 tbsp honey
- 1 tbsp fresh ginger, chopped
- 1 ea garlic clove, chopped
- ½ tsp ground turmeric
- 1 ea zest and juice of one small apricot
- ¼ c Sola Stella Extra Virgin Olive Oil
- to taste salt and white pepper
Directions:
- Place Peach Balsamic Vinegar, tahini, honey, ginger, garlic, turmeric, orange zest and orange juice in a blender and blend until smooth.
- Once smooth, slowly drizzle in the Sola Stella Extra Virgin Olive Oil while the blender is running. Season to taste with salt and white pepper.
- If desired, you can thin the dressing with 2 tbsp of cold water.
