With the help of a food processor, a few essential ingredients, and a touch of curry, this yellow gazpacho recipe will leave you longing for more.

Summer Soup: Yellow Gazpacho with Curry and Spicy Shrimp
What is Gazpacho?
Gazpacho is a chilled soup originating from Spain, typically made with fresh vegetables with olive oil, vinegar, and other seasonings. Red gazpachos typically contain red tomatoes, red bell peppers, tomato juices, etc. Yellow gazpachos often contain yellow tomatoes, yellow bell pepper, corn and more. You can really get creative when serving this refreshing cold soup!
This twist on the traditional gazpacho combines the bright hues of yellow squash, yellow onion, with the delicious spices of yellow curry, creating a feast for the eyes and the palate. The beauty of gazpacho lies in its simplicity and the use of fresh produce, making it the perfect dish to celebrate the bountiful offerings of the farmer's market.
Ingredients:
Gazpacho Ingredients:
- 1/3 cup Chef's Blend Extra Virgin Olive Oil
- 4 cups yellow squash, deseeded
- 1 yellow onion, chopped
- 3 tablespoons minced clove garlic
- 1 tablespoon hot curry
- 6 cups vegetable stock base
- 3/4 cups heavy whipping cream
Spicy Shrimp Ingredients:
- 2 pounds (13-15) shrimp
- 1/4 cup Persian Lime Balsamic Vinegar
- 1 lime, zested and juiced
- 3 tablespoons chipotle powder
- 1/2 tablespoon salt
- 1/2 tablespoon black pepper
- 1/3 cup Chef's Blend EVOO
Directions:
Curried Yellow Squash Gazpacho:
- Sauté onions and garlic in EVOO on medium-high heat until translucent
- Add diced yellow squash, and cook the mixture on medium heat for 20-30 minutes with hot curry until squash is tender
- Add vegetable stock and simmer for an additional 30 min
- Add to blender and blend until smooth
- Salt and pepper to taste
- Place in cooler to chill
Spicy Shrimp:
- Place all ingredients in a bowl and mix well, allow shrimp to marinate for a couple of hours (1-2 hrs)
- For shooters as an appetizer, add shrimp to short skewers
- If over a large bowl, leave off skewers
- Grill shrimp 2-3 minutes per side
For shooters: Place gazpacho in shot glass, top with shrimp skewer, and serve.
For small bowl: Place gazpacho in bowls, and top with shrimp and other desired toppings.
If not ready to serve, store it in an airtight container for future enjoyment.
