Spicy Garlic Shrimp with Balsamic Parsley Coulis
Spicy Garlic Shrimp, otherwise known as Gambas al Ajillo, is a heavenly Spanish shrimp dish that is the perfect balance of fat and heat. Seriously, our mouths are watering just thinking about it!
The combination of our Sola Stella Extra Virgin Olive Oil and butter makes the perfect fatty base for the salty shrimp. AND, to top it all off, the garlic and red pepper flakes add the perfect punch.
To make things even better, we've upgraded our version with a delicious parsley coulis: a blend of spice and herbs PLUS our Lemon Infused EVOO and Persian Lime Balsamic Vinegar. The citrus in our oil and vinegar really brings out the flavors of the shrimp, and we truly can't get enough.
Spicy Garlic Shrimp with Balsamic Parsley Coulis

Ingredients:
Shrimp:
- 1/2 cup garlic, finely chopped
- 8 wild caught shrimp
- 1/2 cup Sola Stella EVOO
- 2 tsp red chili flakes
- 1/2 cup butter
- Salt and pepper, to taste
Balsamic Parsley Coulis:
- 1 cup parsley
- 1/4 cup Lemon Infused EVOO
- 6 garlic cloves, finely chopped
- 1/4 cup Persian Lime Balsamic
- 1 tsp cumin
- 1 tsp chipotle pepper flakes
- Salt and pepper, to taste
How to Make: A Step by Step Guide
Step 1: Make Coulis
Place all coulis ingredients in a blender and mix well. Set aside for later.
Step 2: Make Crispy Garlic
Heat olive oil, butter, garlic and red pepper flakes over low heat, cook till garlic is golden brown and crispy.
Step 3: Reserve Garlic and Transfer Oil/Butter Mixture
Pull garlic from heat and strain keeping the bits of garlic and reserving the olive oil and butter mixture. Transfer butter and oil mixture to the frying pan.
Step 4: Cook Shrimp
Heat pan on medium high heat with butter and oil mixture. Add shrimp and cook for approximately 3 min, then flip and cook 3-4 additional minutes.
Step 5: Remove Shrimp, Plate, and Serve
Remove shrimp from pan and plate atop the sauce and sprinkle with crispy garlic.

We can't get enough of this Spanish inspired shrimp dish, especially with the addition of our coulis! They pair so incredibly together, and we hope you enjoy it as much as we do.
This dish makes an amazing Spanish tapas, when served with little tooth picks as an appetizer, and some bread (like our Pane di Granoturco) to soak up that extra oil and coulis!
BUT it also makes a delicious entree. We love to serve it with a side of our Harissa Broccolini or in a recipe like Zucchini Linguini!
