Rosemary & Lemon Sautéed Chicken Breasts

Ingredients: 4 ea                  boneless, skinless chicken breasts ¼ c                   all-purpose flour 1 tsp                 dried oregano 1 tsp                 smoked paprika to taste             salt and black pepper 2 tbsp               Sola Stella Extra Virgin Olive Oil 2 tbsp               yellow onion, finely diced 4-5 ea              roasted garlic cloves 2-3 ea              sprigs of rosemary  ¼ c                  white wine 1 ea                  lemon, sliced Directions: Combine flour, oregano, smoked paprika, along with salt and pepper thoroughly. Dredge chicken breasts in seasoned flour and shake off excess. Place large sauté pan over medium heat. Once the pan is hot add the Sola Stella Extra Virgin Olive Oil. Southwestern Farro Salad

You can't deny that an excellent heart-healthy salad is the best way to start the new year off right. But, for us, we like our salads to be filling. None of these scrawny salads that leave you hungry in an hour or less. That's why this particular mixture is one of our fave's. It combines healthy grains, protein, and good fats. Walnut and Cranberry Biscotti

Makes Approximately 24 Cookies Ingredients: ¼ C Sola Stella Extra Virgin Olive Oil ¾ C Sugar 2 tsp Vanilla Extract ½ tsp Orange Extract ½ tsp Salt 2 ea Eggs 2 tbsp Orange Zest 1 ¾ C All Purpose Flour 1 tsp Baking Powder ½ C Dried Cranberries 1 C Walnut Pieces, Toasted  Directions:  Preheat oven to 350 degrees. In a large bowl whisk together olive oil, sugar, extracts, salt, and eggs until smooth Combine flour and baking powder and gradually mix into the egg mixture. Fold cranberries and walnuts in by hand.
